BUCKIN' BRONCO STEW
Ingredients:
1/2 T. Olive Oil
4-5 Links Chorizo, Chicken Chorizo or Chicken Sausage
Onion, diced (amount is up to you)
2 Garlic Cloves, minced
1/4 tsp. Red-Pepper Flakes
1 6 oz. Can Tomato Paste
2 14 oz. Cans Low-Sodium Chicken Broth
2 15 oz. No Salt Garbanzo Beans
Potatoes, diced (2-3 small to medium ones)
1 Bag Baby Spinach
Pepper to Taste (salt too if needed)
Directions: In a large pot add olive oil, chorizo/sausage, onion, garlic cloves, red-pepper taste. Saute until sausage cooked. Then, add the rest of the ingredients - except Spinach. Let stew simmer until thickened up and potatoes are soft - stir once in awhile. Last 10 minutes, stir in spinach. Cook until spinach is soft. Enjoy...the Meals in a Rush way.
