CROCK POT CHICKEN & DUMPLINGS

Ingredients:
4-5 Boneless Chicken Breasts - Trim fat and Cut each Breast in Half
2 T. Butter
2 (10 oz.) Cans Condensed Cream of Chicken Soup - Undiluted
1 (14 oz) Can Chicken Broth
1 (10 oz) Refrigerator Biscuit Dough
Onion
1 Bag Mixed Frozen Veggies (optional and your choice of what kind of veggie)
Salt and Pepper to Taste
 
Directions:
Put everything in crock pot except veggies and biscuits.  Start with the butter, soup, broth and onion. Give that a good stir. Then, add your chicken breasts. Give another good stir. Cook on high 5-6 hours; low 7-8 hours. Then, 2 hours before serving put in bag of unthawed frozen veggies. Stir. Then, roll each biscuit into 1/8" thickness - pretty thin. I use about 3-4 biscuits.  Cut into strips and then layer on top of the chicken. OR, you can also take each biscuit and cut into quarters - press each section of the dough flat and lay over mixture.  About half way through cooking the biscuits and veggies (optional), lightly move around with a fork.  If you do use the whole can; will take longer to cook.  For any remaining biscuits store in the fridge and use next time you heat up your Chicken & Dumplings.  Enjoy...The Meals in a Rush way!
