CHICKEN ENCHILADAS


Ingredients:
8-10 Tortillas Regular Size
8 oz. Original Cream Cheese
4-6 Chicken Breasts Cooked (about 3-4 Cups Cubed Chicken)
1 C. Grated Parmesean Cheese
2 C. Enchilada Sauce
Butter
9 X 13 Dish

Directions:
Heat oven to 350 degrees. Cook chicken in pan making sure cooked thoroughly and nicely browned. Salt and pepper on both sides. Set aside and let cool. Once cool cut chicken into cubes. Butter a 9 x 13 cooking dish on bottom and all sides. Take tortilla and spread one side with cream cheese. Now, place a handful of chicken inside (I like to stuff the tortillas), fold, then place folded side down in the dish. Repeat until the dish is full of tortillas. Once done, cover with enchilada sauce and then sprinkle with the parmesan cheese. Cover with foil to cook. Place in oven and bake for about 20-30 minutes. Chicken Enchiladas are done once the sauce is boiling. There you have it Chicken Enchiladas…the Meals in a Rush Way!
