CHICKEN FETTUCCINE ALFREDO
Ingredients: 1 lb. Fettuccine (1 standard sized box) 4 T. Butter 1 Cup Half & Half or Light Cream 1 Cup Grated Parmesan Cheese 1 t. Black Pepper 4-5 Chicken Breasts Parsley Flakes
Directions: Grill/Cook chicken breasts. Put in oven; set to broil or throw on bbq - cook all the way through. In a big pot, boil water. Once water is at a rapid boil cook fettuccine until nice & tender. (Pasta hints: don't put in pasta until water is at a complete boil; use big enough pot to cook pasta; don't use oil in water; once the water is at a rapid boil put in salt!). Let chicken cool. In the meantime, melt butter on low-medium heat then add half & half. Mixture needs to be nice and hot! Be careful not to burn the half & half. Stir frequently. Cut chicken into cubes/bite sized pieces. Drain pasta. Put pasta in a big bowl, pour over butter mixture, sprinkle over parmesan cheese, then top with chicken breast, sprinkle with pepper. Mix together until fettuccine is covered with the sauce. The more you mix the better it is! Top with fresh parsley flakes if desired. Serve with green salad and garlic bread!
