FRENCH TOAST CASSEROLE
Ingredients:
Bread ( about a half of loaf/around 8 Cups of cubed bread)
1/3 Cup Pecans, Walnuts (any choice of nut)
1/2 Cup Packed Brown Sugar
1 t. Cinnamon or to taste
4 Large Eggs
1 Cup Milk
1 t. Vanilla Extract (you can also add a touch of Maple Flavoring)
Syrup and Butter to serve; along with any fruit, bacon or sausage
Directions: Preheat oven to 350 degrees. Grease 8X8 Baking Dish. Break bread into chunks, you'll need about 6-8 cups. Don't put too much, overpacking the bread. In a bowl combine brown sugar, cinnamon and chopped nuts. In another bowl mix together eggs, milk and vanilla extract and maple flavoring. In the greased baking dish place around half of the bread. Then, on top of that place half the brown sugar mixture. Next, take the rest of the bread and place around followed by the rest of the brown sugar mixture. Now, starting from the outer edges to the middle pour over the egg mixture evenly. Finally, with a spatula or fork press down on the bread so its coated with the egg mixture. Place in oven and bake for 30 minutes. Check half way through to see how its cooking. Each oven varies. Don't over cook. Egg will be done and slightly firm to touch. Serve warm with butter, syrup and any other of your favorite breakfast items such as fruit, bacon, sausage. Keep breakfast in your diet! ENJOY...the Meals in a Rush way.
