Ingredients: 1/4 Cup Softened Butter 1 Egg 1/4 Cup Brown Sugar 1/4 Cup White Sugar 1 tsp. Vanilla 1/2 Cup Sifted Flour 1/4 tsp. Soda 1/4 tsp. Baking Powder Dash of Salt 1/4 Cup Grated Coconut or Chopped Nuts or both 1/4 Cup Gumdrops (Dots) cut into bite-size pieces 1/2 Cup Quick Oatmeal
Directions: Pre-heat your oven to 350 degrees. Lightly Grease 2 cookie sheets. Sift your flour. In a large mixing bowl; mix together butter, egg, sugars and vanilla until creamy. Then, with a spoon measure out 1/2 C. of sifted flour into measuring cup. When measuring flour don't pack into measuring cup; want to stay light and airy. Also, don't use liquid measuring cup for dry products. Pour all dry ingredients into butter mixture, blend again. Now, add coconut, nuts, gumdrops and oatmeal. With spoon finish stirring everything together. Drop by teaspoon amounts onto cookie sheets. Makes about 18-20 small cookies. Bake about 10 minutes until lightly brown.
