MANICOTTI 

Ingredients:
1 1/2 lb. Hamburger (or pork, chicken or combination)
1/2 Cup Chopped Onion
8 oz. Shredded Mozzarella Cheese
2 Eggs, Beaten
1 1/2 Cup Homemade Bread Crumbs (break apart your favorite bread and let sit out overnight, so dried up)
3/4 Cup Milk
2 T. Minced Parsley
1/2 t. Garlic Powder
1/2 t. Salt
1/4 t. Pepper
2 - 3 (29 oz.) Cans Tomato Sauce (this equals around 3 Cups, depending on how much sauce you would like!)
Grated Parmesan Cheese, to garnish
8 oz. Manicotti Pasta

Directions:
Preheat oven to 375.  Mix bread crumbs and milk. Set to the side and let bread crumbs absorb milk. Then, lightly brown meat with onion, salt and pepper; drain and cool slightly. Mix with 1 cup mozzarella cheese and 1/2 cup tomato sauce with meat mixture. Set aside the remainder of those ingredients. Add the remainder other ingredients to meat mixture; eggs and soaked bread crumbs. Cover bottom of baking dish with 3 cups of sauce. Fill uncooked manicotti shells with meat mixture and arrange in a 9x13 Baking Dish (single layer). Any remaining meat mixture may be combined with remaining sauce and then cover manicotti with this mixture. Make sure manicotti is covered on top so doesn't dry out while cooking.

Very important, cover dish tightly with tinfoil and bake for (1) hour. Uncover and top with remaining mozzarella cheese; bake for additional 10 minutes. Take out of oven; sprinkle with parmesan cheese; cool a bit then serve!  Enjoy....the Meals in a Rush way! **Also fabulous to cook the night before to let all the sauces combine and the re-heat the next day. Awesome as leftovers.
