MOTHER'S MARVELOUS MEATLOAF

 

Ingredients:
1 -1.5 lbs. Hamburger
1 Egg
3/4 C. Oatmeal
2 Cans Tomato Soup:(1 Can Tomato Soup - for mixing & 1/2 - 2/3 Cup Tomato Soup - for top)


Directions:
Preheat oven to 350 degrees. In a big bowl mix all of the above ingredients with just 1 can of tomato soup. Use your own judgment as to how moist you would like your meatloaf by adding less or more tomato soup. I find one can is sufficient for moisture. Once mixed thoroughly, spread in a standard size loaf pan, ungreased. Spread around evenly and then top with 1/2 to 2/3 Cups of Tomato Soup. Cook for 1 hour. Make sure bubbly all the way around and cooked through to the middle. Set out for about 5-10 minutes to cool before serving. This recipe is also delicious using Cream of Mushroom Soup, instead of the Tomato. If you want smaller, individual servings muffin tins work great! This will also cut down on cooking time. Meatloaf Tips for Cooking:

1. The higher grade of ground meat, the less fat and shrinkage will result. Less fat also means less flavor & moistness.

2.  If you use bread crumbs, do not overdo. An excess can make the loaf spongy.

3.  Topping the loaf with bacon strips can add moisture, flavor & tenderness.

4. For individual servings of meatloaf that bake quickly, put into muffin tins!
