DENVER'S MILE HIGH CHICKEN TORTILLA PIE
Ingredients: 3 Cups Shredded Cooked Chicken Breast (I use the already cooked Rotisserie Chicken) 1 (16 oz) Can Refried Beans 1 (15 oz) Can Black Beans and/or Pinto Beans (Drained) 1/2 Cup Salsa (your favorite kind!) 1 Cup (10 oz Can) Enchilada Sauce (mild, medium and hot - whatever your taste buds like) 5-6 (8 inch) Multigrain Tortillas (However High You'd like to go) 1/2 Cup Shredded Cheese (your favorite kind!) 1 (4 oz) Can Diced Jalapenos Sour Cream Guacamole/Avocados Cooking Spray Pie Cooking Plate Tinfoil
Directions: Preheat oven to 450 degrees. In a big bowl, combine shredded chicken with salsa..using really as much salsa/chicken as you'd like. Grease the pie plate. Spread evenly on the first tortilla the refried beans. Place first tortilla in the pie plate. Then, top that tortilla with black beans, chicken/salsa mixture and cheese, jalapenos. Keep stacking and get as "Mile High" as you'd like. Once done stacking, pour over the enchilada sauce and then top or place around the Tortilla Pie any left over black beans, chicken, etc. Cover lightly with tinfoil. Put into oven and heat up for about 15-20 minutes until cheese melted. Remove from oven, cut and serve with some sour cream or guac! ENJOY...the Meals in a Rush way.
