NO BAKE CHOCOLATE MARSHMALLOW COOKIES

Ingredients:
1/2 Cup Butter
1-1/2 T. Cocoa
1/2 Cup Chopped Walnuts
1 Beaten Egg
1-1/2 Cup Powdered Sugar
1 Cup Shredded Coconut
1 Pkg. 16 oz. Mini Marshmallows (use about 12 oz.)

Directions:
In a larger saucepan on low to medium heat melt butter, then add cocoa stir together. Next, add the beaten egg, stir and cook until slightly boiling. Stir frequently so mixture doesn't burn. May need to turn down/adjust heat accordingly. Add rest of ingredients; walnuts, powdered sugar and coconut. Once mixed together, take off heat and let sit until cooled down. Then, add your mini marshmallows. You'll want to use about 12 oz. See how the consistency is at that point. You want the marshmallows to be well coated/sticking together with the chocolate mixture. Don't add too many or it will be tough to make the different rows. Next, take a couple of cookie sheets, top with waxed paper; also add a touch of grease on top of the waxed paper. Then, make long rows of chocolate-marshmallow mixture on greased wax paper; about 3-5 rows depending on how big the cookie sheet is in size. Chill in the refrigerator until rows are harder to touch. Take out, slice and serve!
