ORANGE CRUSH COOKIES

Ingredients:
2 Boxes 12 oz. Nilla Wafers - Crushed
1 Stick Soft Butter (8 T.)
1 Cup Powdered Sugar
3/4 Cup ( 1 - 12 oz. Can) Orange Juice from Concentrate -Thawed
1 Bag Shredded Coconut

Directions:
Set out butter to soften and o.j. to thaw in its original container. Place nilla wafers in gallon ziploc bag and completly crush with a rolling pin or hammer. If you use a hammer make sure to place the bag on a cutting board when pounding. Crush enough to make 5 cups. Place the crumbled nilla wafers into a big bowl and add the butter. Mix/press that together first with a fork and then add the powdered sugar and orange juice. Mix together until a nice dough consistency. Make walnut sized balls and then roll in the coconut. Place in air tight container and let the cookies chill. You can also let the dough harden up a bit in the fridge as well, this allows for easier rolling. Once done, the longer the cookies get to chill in the fridge the better! Yummy!
There you have it, a delicious sweet treat the Meals in a Rush way.
