Whip Up an E-mail

PUMPKIN COBBLER

Ingredients:
3 Eggs
1 Cup Sugar
2 Cups Evaporated Milk
3 Cups Canned Pumpkin
1/2 Teaspoon Salt
2 Teaspoons Cinnamon
1/4 Teaspoon Ground Cloves
1 Teaspoon Ground Ginger
1 Pkg Yellow Cake Mix
1/2 C. Butter (softened)
Chopped Nuts (optional)

Directions:
Heat oven to 350 degrees. Lightly grease a 13X9 cake pan. In a large bowl blend together first (8) ingredients. In another bowl pour in yellow cake mix and softened butter. Cut/Mix together with fork. Pour all of pumpkin mixture into cake pan. Then, pour cake mix on top, spreading evenly. Use fingers to help spread around. If you use nuts, add those last on top of the cake mixture. Lightly pat cake mix into pumpkin mixture. Make sure the cake mix is evenly distributed around for even cooking.  Place in oven and bake for (1) hour or until top is a light to medium brown. You want the pumpkin mixture to be firm to touch.  Once cooked, let cool before serving.  Serve with whipped cream or ice cream on top. This will firm up once completely cool. This dessert also tastes fantastic cold! Enjoy....the Meals in a Rush way.
