SALMON LOAF

Ingredients:
1 Big Can Salmon (14.75 oz.) with juice
2 Eggs Beaten
1/4 Cup Melted Butter
1/2 Cup Crushed Whole-Wheat Saltines (or soft bread crumbs - 1 slice)
1 T. Flaked Parsley
Pepper to Taste

Directions:
Preheat oven to 350 degrees.  Pour salmon with juice into mixing bowl. With fork break up/flake pieces of salmon. Add all the remaining ingredients.  Stir until mixed. In a greased loaf pan pour in mixture and lightly and evenly spread around. Bake for about 40-50 minutes. Salmon Loaf will be done when light brown around sides and the top of salmon is firm to touch. Enjoy....the Meals in a Rush way!
