SALSA CHICKEN


Ingredients:
2 lbs. Boneless Skinless Chicken Breasts - (cut into 1-inch cubes)
2 tsp. Canola Oil
1 C. Chunky Salsa
1/3 C. Orange Marmalade
2 T. Lime or Lemon Juice
1 T. Brown Sugar
1/4 tsp. Ground Allspice

Directions:
First, heat up oil in the pan. cut up and cook the chicken in a large pan make sure to trim any excess fat. While that's cooking, in a bowl stir together the rest of the ingredients. Mix all together. Once the chicken is done, drain excess liquid from cooking. Then, pour in the salsa mixture. Stir all together until the chicken is coated. Bring to a rapid boil for 5 minutes and then reduce heat and simmer, uncovered for 20 minutes. Stirring occasionally. The longer you can let simmer, the better. You want things to thicken up a bit so you have nice sauce and all the chicken is coated. Serve with brown rice. Enjoy...the Meals in a Rush way.
