STUFFED TOMATOES

Ingredients:
4 Large Tomatoes
1/4 Cup Light Mayonnaise
2 Cups Chopped Rotisserie Chicken
1 Cup Corn (Fresh or Frozen)
1/2 Cup Diced Chives
Salt & Pepper to Taste
1/4 Cup Water Chestnuts
 
Directions:
Core tomatoes. Scoop flesh into strainer set over bowl to catch juice. Let sit for a bit so you can get as much tomato juice. Mix together the juice, mayonnaise, chicken, corn, chives, salt/pepper & water chestnuts.  Spoon into tomato shells. Enjoy...the Meals in a Rush way.
