TURTLE COOKIES

Ingredients:
1 1/2 C. Sugar
1 C. Butter
4 Eggs
2 tsp. Vanilla
2 C. Sifted Flour
1/2 C. Cocoa

Directions:
Take out butter to soften and turn on waffle iron at medium heat. Once butter is softened place in big mixing bowl and add sugar. Mix together until creamy. Then add eggs and vanilla. Mix once again. Then, add flour and cocoa. Use mixer until "Turtle Cookie" recipe thickens, may need to finish up with a spoon. Once complete, place by teaspoon amounts on waffle iron. Bake for about 1-2 minutes. Depending on how your waffle iron cooks, times may vary. Open lid and check. "Turtle Cookies" should be still a little soft without any real dark spots. They cook fast, so you don't want to burn them. Once done take out with fork and place on waxed paper to cool. You can frost the cookies or eat as is. A powdered sugar frosting works great. This is a mixture of powdered sugar, tad of milk and tad of vanilla. There you have it "Turtle Cookies" that are speedy and easy to make. Enjoy...the Meals in a Rush way!
