Kick-off Casserole

Tawnya Rush brings Meals in a Rush to the Magic City. With a lot on our plates, many of us are looking for a healthy and homemade meal or snack that doesn’t eat up a lot of time – recipes that are easy, delicious and yummy.  Tawnya has dished out Meals in a Rush in different markets during her tv career, nationally and internationally – making way for her first Emmy Award. Let’s get cooking!

Casserole Ingredients:

1 Large Package Corn Chips
1.5 Pounds Hamburger
1 15 oz. Can Refried Beans
1 15 oz. Can Tomato Sauce
1 Large Can Mild Enchilada Sauce
Shredded Cheese
Optional – lettuce, guacamole, sour cream

Preheat oven to 350 degrees. Cook up hamburger until nice and brown – drain excess fat. In a 13X9 baking pan (lightly greased) layer the above ingredients. First, cover the bottom of the pan with corn chips.  Next, add the hamburger and spread around evenly then on top of that spread refried beans (to make refried beans easier to spread, put in a microwave safe dish – heat up for about 30 seconds give it a good stir). Next, pour over tomato and enchilada sauces. Add more or less of whatever ingredient you would like. Lightly place a piece of tinfoil over the dish; bake for about 30-40 minutes (ovens vary) or until the sauce is bubbling. Take out and then sprinkle over cheese. Put back in oven and cook until cheese is melted. Once complete let cool for a bit. Serve with shredded lettuce, guacamole and sour cream. Enjoy…the Meals in a Rush way!
