APRICOT-BRAN BREAD

Ingredients:
Boiling Water
1 Cup Finely Snipped Dried Apricots
1/2 Sugar
1 1/2 Cups Sifted Flour
3 3/4 Teaspoons Baking Powder
1 Teaspoon Salt
1 1/2 Cups Whole Bran Cereal
1 Cup Milk
2 Beaten Eggs
1/3 Cup Cooking Oil

Directions:
Heat oven to 350 degrees. Boil enough water to cover apricots. Pour boiling water over apricots and let stand for 10 minutes. In another bowl mix together bran cereal, milk, eggs and oil, set to the side. In a larger bowl stir together the flour, sugar, baking powder and salt. After the apricots have sat for 10 minutes, drain the water.  Now, add the bran mixture to the flour mixture and stir until moistened. Then, add the apricot mixture to that. Stir until mixed thoroughly. Pour into a greased 9 X 5 loaf pan. Place in the pre-heated oven and bake for about an hour. The bread while be a nice light brown when done and you can also press down lightly in the middle of the bread to see if its done. When the bread springs back up, you're ready to take it out of the oven or you can use the toothpick method. Once out of the oven before serving take a butter knife and go around the edges of the pan and then flip out onto counter and slice up. ENJOY...the Meals in a Rush way.
