**As you watch, after pouring out on baking sheets, Caramel Popcorn bakes in oven before putting into Sacks to cool.

CARAMEL POPCORN

Ingredients:
1 Cup Butter
2 Cups Brown Sugar (packed firmly)
½ Cup Corn Syrup
1 tsp. Salt
1 tsp. Vanilla
½ tsp. Soda
1 C. Popcorn Kernels (equals 20 Cups popped)
3 T. Cooking Oil 

Directions:
Preheat your oven to 250 degrees. In a large pot pour in the oil, let warm up a bit and then add the unpopped kernels.  Cover with lid and start popping your popcorn the old-fashioned way on the stovetop. Once done pour out onto (2) different cookie sheets with sides. You need 20 Cups of the popped popcorn. Spread evenly around. Then, mix brown sugar, butter, syrup, salt and vanilla melting over medium-high heat; bring to a rapid boil.  Boil 3 minutes.  Remove from heat and add soda and stir fast.  Pour over popcorn and mix well.  Add nuts if desired. Bake at 250 degrees in oven on cookie sheets for 1 hour. Stir 2 or 3 times within that hour.  Out of the oven pour entire caramel popcorn into one brown paper sack and stir occasionally with spoon as it cools.  Then, store in tight container. When you put the caramel popcorn in the brown bag, some of the oil is soaked onto the bag. Enjoy...the Meals in a Rush way!
